Cauliflower & Onion Skillet


*2 TBSP of olive oil
*6 C of cauliflower florets (cut small)
*2 onions cut into wedges
*1/2 tsp salt
*1/2 tsp pepper


1.Heat the oil in a hot skillet then stir in the cauliflower and onions,
2.Cook 8 minutes, stirring frequently until tender.
3.Season the vegetables with the salt and pepper before serving.


This is sort of a vegetable stir fry because you want to cook the cauliflower and onion in a relatively hot skillet so the cauliflower doesn't get soggy, just crisp-tender. Be sure you cut the cauliflower up small enough so the onion doesn't cook faster than the cauliflower does. This is a nice side dish with a grilled pork tenderloin or even Minute Steaks.
