Cauliflower Soup

Ingredients

* 1 medium cauliflower head
* 2 cups milk
* 3 cups water
* 1 ounce butter
* 2 oz wholemeal flour
* Pinch of nutmeg
* Pepper/salt
* Juice from one lemon

Directions

1. Wash and break cauliflower into flower sized pieces.
2. Place cauliflower florets in 3 cups of water.
3. Add butter, nutmeg and salt and pepper.
4. Boil until cauliflower becomes tender.
5. Add milk and boil.
6. Use wholemeal flour (smoothed with cold water) to thicken to desired consistency.
7. Add lemon juice, simmer for 10-15 minutes and serve.

Story

Serve with whole wheat crackers, bread or toast.
