Celery Soup |
Ingredients
|
* 1 T Butter
* 4-5 celery stalks with leaves, cut into pieces
* 2 T finely chopped onion
* 1 3/4 cup Chicken Broth
* salt & pepper
* 1/4 cup plain yogurt
* 1 T finely choppped dill or parsley

Directions

1. Heat butter in suacepan over moderate heat.
2. Add the celery and onion. Cook & stir for about 2 minutes or until softened.
3. Add 1 cup of the chicken broth to the pan and bring to boil.
4. Reduce the heat to low. Cover pan & simmer about 10 minutes or until veggies are soft.
5. Then puree the soup (this is the most important step!)
6. Return the puree stuff to the saucepan. Whisk in the reamining broth.
7. Increase the heat to medium and bring it to a boil. Then return the heat to low and simmer the soup for about 5 minutes until it's thick & smooth.
8. Season soup with salt & pepper.
Serve it warm with a glop of cool plain yogurt on top and sprinkle some dill or parsley on for a little pizzazz.

Although this soup sounds plain, it's just wonderful with the cool, tangy yogurt on top.
