Cheddar Almond & Bacon Stuffed Mushrooms |
Ingredients

* 1 C slivered almonds
* 1/2 lb. crisp bacon, crumbled
* 1 (8 oz.) pkg. cheddar cheese, shredded
* 6 green onions, chopped
* 2 C of mayonnaise
* 30 large fresh button mushrooms, remove stems

Directions

1. Set the oven temperature to broil and allow the broiler to heat.
2. In a mixing bowl combine the bacon, cheese, almonds and green onions.
3. Fold the mayonnaise into the mixture until well combined.
4. Spray the bottom of a shallow baking dish with non stick cooking spray.
5. Stuff the mushrooms with the mixture and place in the prepared dish.
6. Broil 4 inches from the heat for 8 to 10 minutes or until the mushrooms are tender.

These stuffed mushrooms are made a little more fancy because you're using almonds in the mix. If you want to make them vegetarian-friendly, omit the bacon and substitute some finely chopped celery for crunch, and a little shredded provolone cheese for the smoky flavor. Of course, imitation bacon bits could be used as well, but I really like to stay away from those for my vegetarian friends. The celery is a lot nicer and crunchier.
