Cheddar & Swiss Black Eyed Peas

Ingredients

* 2 cups cooked rice
* 2 cups cooked black eyed peas
* 3 slices bacon, browned and crumbled
* 1/2 teaspoon dried mint
* 3 cups shredded Cheddar cheese

* 4 eggs
* 1 cup white wine
* 1 teaspoon onion powder
* 1 teaspoon garlic powder
* 1/2 teaspoon salt
* 4 slices Swiss cheese

Directions

1. Preheat oven to 350.
2. Mix together first 5 ingredients in a casserole dish.
3. In a separate bowl, beat together the eggs, wine, onion powder, garlic powder and salt.
4. Stir this mixture into the casserole.
5. Arrange Swiss cheese slices on top and bake for 50 to 60 minutes.

Story

You really could serve this as a main dish because black eyed peas are loaded with protein, fiber, and all kinds of good stuff. Plus, the cheese doesn't hurt! Enjoy!
