Cheesy Ravioli Spinach Lasagna In A Skillet

Ingredients

* 2 C of chunky style pizza sauce
* 1/3 C of water
* 1 (9 oz) pkg. refrigerated cheese ravioli
* 1 (10 oz) pkg. frozen chopped spinach, thawed and squeezed dry

* 1 egg
* 1 (15 oz) container of ricotta cheese
* 1/4 C Parmesan cheese, grated

Directions

1. In a large heavy skillet, stir the pasta sauce and water together and bring to a boil over medium heat.
2. Stir in the ravioli and cook for 5 minutes or until the ravioli is just beginning to soften.
3. Arrange the spinach evenly over the ravioli and turn heat down to low.
4. In a separate bowl, put the egg and beat lightly with a fork, then add the ricotta and Parmesan cheese and whisk until blended in well.
5. Spread this cheese mixture over the top of the spinach.
6. Continue cooking for 10 minutes or until the cheese layer is set.

Story

This meal is quick, filling, and delicious. Go ahead and substitute cottage cheese for the ricotta if you don't have it. And you can use any flavorful grated cheese if you want instead of the Parmesan. Just play with the ingredients and enjoy!
