Cheesy Spinach Lasagna Bake


*1 TBSP extra virgin olive oil
*1 C onion, chopped
*4 garlic cloves, minced
*1 (28 oz.) can peeled whole tomatoes and juice
*1 (7 oz.) container sun dried tomato pesto
*2 eggs
*2 (15 oz.) containers ricotta cheese
*1 (14 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
*1 (8 oz.) pkg. Italian cheese blend, shredded
*1/2 C Parmesan cheese, grated
*1/4 tsp. salt
*12 oven ready lasagna noodles


1. Empty the oil into a large skillet placed over medium heat.
2. When the oil is hot add the onion.
3. Cook 3 minutes.
4. Stir the garlic in with the onion and cook an additional 1 minute.
5. Pour the tomatoes and juice into the skillet.
6. Use the back of a spoon to crush the tomatoes.
7. Set the heat down to low.
8. Cook 3 minutes.
9. Stir in the pesto.
10. Remove the skillet from the stove.
11. Break the eggs into a large mixing bowl and beat slightly.
12. Place the ricotta cheese in with the eggs.
13. Add the spinach into the mixture.
14. Place 1/2 of the Italian cheese blend into the bowl.
15. Blend the ingredients together well.
16. Sprinkle the Parmesan cheese into the mixture and stir to combine.
17. Cover the bottom of a large rectangular baking dish with sauce.
18. Lay 4 noodles over the sauce.
19. Spread cheese mixture over the noodles.
20. Top with more sauce.
21. Repeat the layers until all the noodles are used and ending with sauce on the top.
22. Set the oven to 375 and allow it to preheat.
23. Sprinkle the remaining Italian cheese over the entire top of the lasagna.
24. Cover tightly with heavy duty aluminum foil.
25. Place in the heated oven for 45 minutes.
26. Remove the foil and continue baking 30 minutes or until bubbly.
27. Let the lasagna stand 15 minutes before cutting.


You are not going to miss the meat in this lasagna. Always buy really good tomatoes for your lasagna and you will never be disappointed in the flavor. All the cheese and the spinach make for a very satisfying meal. Take your time and enjoy putting together this masterpiece for your family.
