If you don't have a panini maker, you'll still want to give this sandwich a try. Just use two cast iron skillets - one to cook your sandwich and one to press it down.
You'll notice she had a little trouble fitting the sandwich in the maker. If that happens to you, you can slice a bit more off the middle of the bread to reduce the thickness a bit. Or you can use the 2 skillet method instead of your machine and enjoy!
