1. Mix the orange juice, celery, bell pepper, mushrooms, onion, parsley, salt and pepper in a crock pot.
2. Arrange the chicken on top.
3. Cover and cook on LOW for 5 hours.
4. In a small bowl, mix the cornstarch and water then stir it into the crock pot.
5. Turn heat to HIGH, cover and cook 1 hour more.
Serve over cooked rice.
