Chicken a la Orange - Crock Pot


* 3 lbs skinless chicken pieces (breasts & thighs work equally well)
* 3 cups orange juice
* 1 cup sliced celery
* 1 cup chopped green bell pepper
* 4 oz can mushroom stems & pieces, drained
* 4 teaspoons dried minced onion
* 1 teaspoon dried parsley
* 1/2 teaspoon salt
* 1/4 teaspoon pepper
* 3 tablespoons cornstarch
* 3 tablespoons cold water

* hot cooked rice


1. Mix the orange juice, celery, bell pepper, mushrooms, onion, parsley, salt and pepper in a crock pot.
2. Arrange the chicken on top.
3. Cover and cook on LOW for 5 hours.
4. In a small bowl, mix the cornstarch and water then stir it into the crock pot.
5. Turn heat to HIGH, cover and cook 1 hour more.

Serve over cooked rice.


This crock pot dish has a lot of flavor and is so easy to make. It's actually a good dish for beginning cooks to try because it's almost impossible to mess up and a new cook can feel kind of fancy by mixing in the cornstarch and water thickener. That little extra step is sometimes all it takes to turn what looks like a lazy meal into an inspired dinner. Cooking for someone special for the first time? Think about it. Enjoy!

Note: Don't forget to cook the rice in time for dinner!
