Chicken Nachos |
Ingredients

* 1 13-oz can of chicken breast (I uses the Member's Mark brand from Sam's Club)
* 1 medium tomato
* 1/3 envelope taco seasoning (I use Taco Bell brand)
* 1/2 cup water
* 1 can refried beans (I use Old El Paso Traditional)
* 2 tbsp oil
* tortilla chips (I use any "restaurant style" chip)
* shredded mixed cheddar & monterrey jack cheese
* optional - sour cream
* optional - guacamole

Directions

1. Chop the tomato and place it and the chicken in a skillet along with the taco seasoning and water.
2. Cook chicken mixture until the tomatoes have cooked down and the water is evaporated.
3. In a different skillet, add the refried beans and oil. Cook until oil is well incorporated and beans are hot.
4. Place foil over two cookie sheets and spray with Pam.
5. Pick through the tortilla chips to find about 16 to 20 good size chips, enough to cover both cookie sheets.
6. Spread the bean mixture on each chip.
7. Place a dab of the chicken mixture on each chip, use your discretion as to how much to put, use all your chicken and all your chips.
8. Place a pinch of the shredded cheese on each chip. Make it hefty if you like a lot of cheese.
9. Cook in a 400 degree preheated oven for about 6 minutes.
10. Optionally serve with sour cream and guacamole.
Serves 3-4.

A local restaurant serves nachos like these and my wife and daughter would always go there and share a plate for lunch. Occasionally I would join them, we all thought they were the greatest thing. My wife played and played with the ingredients and this is her version of the recipe. We all think it tastes exactly like the one at the restaurant.
