Chicken & Vegetable Alfredo - Crock Pot

Ingredients

* 1 1/2 lbs boneless skinless chicken thighs, cubed
* 2 ribs celery, diced
* 1 red bell pepper, finely chopped
* 16 oz jar alfredo sauce
* 3 cups fresh broccoli florets
* 8 oz package fettuccini, cooked per package directions
* 3/4 cup grated parmesan cheese

Directions

1. Combine chicken, celery and bell pepper in crock pot. Pour alfredo sauce over mixture.
2. Cook, covered, on low for 5 1/2 hours.
3. Turn crock pot to high and stir in broccoli. Cover and cook for another 1/2 hour.
4. Add cooked pasta and stir.
5. Sprinkle parmesan cheese on individual servings.

Story

I love how easily this yummy dish comes together. Adding the fresh broccoli during the last half hour preserves the color of the broccoli and really brightens up the dish. If your kids don't like tomatoes, this is a great way to serve a fettuccini dish that doesn't involve a tomato-based sauce.
