Chili Rice Casserole

Ingredients

* 3 cups cooked rice
* 1/2 teaspoon garlic powder
* 4 oz can chopped green chilies
* 2 teaspoons chili powder
* 1/2 teaspoon salt
* 15 oz can kidney beans, drained
* 1 medium onion, diced
* 2 teaspoons cumin
* 1 teaspoon oregano

* 2 oz shredded Cheddar cheese

Directions

1. Preheat oven to 350.
2. Put all ingredients (except cheese) in a big bowl and mix gently to combine well.
3. Turn this mixture out into a greased large casserole dish.
4. Cover the casserole and bake for 30 to 35 minutes.
5. Uncover and top with cheese, then bake an additional 10 minutes.

Story

We make this dish quite often to use up cooked rice. It's sort of like having a bowl of chili only in a casserole. Kids love it!
