Chilly Marinated Mushrooms


* 1 lb small fresh whole mushrooms
* 1 onion, sliced thin
* 1/3 C white wine vinegar
* 1/3 C canola oil
* 1 tsp salt
* 1 tsp ground mustard


1. Place mushrooms and onion in heavy pot.
2. Mix vinegar and oil together in a bowl and pour the mixture over mushrooms and onions.
3. Sprinkle the salt and mustard over the mixture.
4. Place pot over medium heat and bring to a boil.
5. Continue boiling for 6 minutes stirring once.
6. Remove from the heat and allow cooling to room temperature.
7. Put in a bowl with a tightly fitting lid and refrigerate 4 hours to overnight.


My family loves those little jars of marinated mushrooms you can buy in the specialty aisles in our neighborhood grocery store. Figuring out how to make our own has really been fun! We enjoy these homemade marinated mushrooms alongside a green salad, as part of an antipasto platter, or just as a little snack. They also make great gifts for someone who is a bit of a food fanatic... like us!
