Chinese Turkey Skillet |
Ingredients

* 1 Tbsp unsalted butter
* 1 onion, sliced
* 2 celery ribs, sliced
* 2 C turkey breast, cooked and cubed
* 1 (8 oz.) can water chestnuts, sliced and drained
* 1 1/4 C reduced sodium chicken broth
* 2 Tbsp cornstarch
* 1/4 C cold water
* 3 Tbsp reduced sodium soy sauce
* 1 (14 oz.) can been sprouts, drained
* serve over rice

Directions

1. Melt butter in saucepan placed over medium heat.
2. Add the celery and onions and cook until tender about 5 minutes.
3. Add in the turkey, water chestnuts and chicken broth.
4. Bring the mixture to a brisk boil then reduce the heat to low.
5. Simmer the mixture for 12 minutes.
6. Mix cornstarch, water and soy sauce together in a separate bowl.
7. Add the cornstarch mixture to turkey mixture and stirring continuously, bring it to a boil.
8. Stir in bean sprouts and cook 10 minutes or to desired thickness

Skillet dishes are an excellent way to quickly cook meals for your busy family. I try to keep water chestnuts and bean sprouts on hand so I can easily whip up a delicious dinner with just a few ingredients from the store, or better yet, using some leftover chicken or turkey.
