Chinese Vegetable Casserole |
Ingredients

* 1 can green beans, drained
* 1 can chow mein vegetables, drained
* 1 can cream of celery soup
* 1/8 teaspoon salt
* 1 can (6 oz) French's fried onions - divided in half
* 1/2 cup chopped almonds

Directions

1. Preheat oven to 350.
2. Combine green beans, chow mein vegetables, soup, salt and 1/2 can fried onions in a casserole dish.
3. Cover and bake for 30 minutes minutes.
4. Uncover and top with remaining French's fried onions and almonds.
5. Put casserole - UNCOVERED - back in oven and continue cooking for 10 more minutes or until top just starts to brown.

I normally have cans of green beans and cans of chow mein vegetables somewhere in my pantry, left from some recipe I made a while back. This was one of the easiest recipes that I've made just digging in my pantry for ideas. It goes together very nicely and tastes great.
I did actually buy some almonds to sprinkle on top, but everything else I had on hand already. You can't get much more frugal than that!
You can turn this into a main dish by just adding a handful or two of cooked, shredded chicken. You might want to stir in a little sour cream if you do that or maybe add a bit of chicken broth. It's a very versatile recipe.
