1. Put the cilantro leaves and garlic in your food processor and, with the motor running, drizzle in the lime juice and oil.
2. Add the salt, pepper, and blend for a few more seconds. Adjust the texture by drizzling in a little more olive oil or lime juice. Taste and add more salt or pepper as desired.
3. Place the mixture into a bowl and cover.
4. Keep refrigerated until ready to use but no longer than 2 days.
