Classic Beef and Rice Tomato Soup

Ingredients

* 1 lb ground beef
* 1 cup chopped onion
* 1 cup diced potatoes
* 1 cup sliced carrots
* 1 cup sliced celery
* 2 cans (16 oz each) diced tomatoes
* 1/4 cup rice
* 3 cups water
* 1 teaspoon salt
* 1/4 teaspoon basil
* 1/4 teaspoon thyme
* 1 bay leaf

Directions

1. Brown the ground beef with the onions; drain any excess fat.
2. Add the rest of the ingredients, stir gently and bring to a boil.
3. Reduce heat, cover, and simmer slowly for about 1 hour, stirring occasionally.
