Classic Cafeteria Corn Tomato Bake |
Ingredients

* 3 (15 oz) cans whole kernel corn, drained
* 1 (14.5 oz) can diced tomatoes with green chilies
* 12 oz sharp cheddar cheese, shredded
* 1 c saltines, crushed

Directions

1. Preheat oven to 350 degrees.
2. Spray a 3 quart casserole with non-stick spray.
3. Combine corn, tomatoes, and cheddar cheese in casserole and mix.
4. Top with saltines.
5. Bake, uncovered, for 30 minutes or until hot and bubbly.

Straight out of every cafeteria I've ever eaten in - the classic corn tomato bake. This time I've added a twist and spiced it up. Replace the plain diced tomatoes with tomatoes and chilies for a little extra flavor. Otherwise, you don't want to mess with this classic - right down to the Cheddar cheese and saltines.
