Classic Sweet And Salty Broccoli Salad |
Ingredients

* 2 lbs. fresh broccoli, cut into small florets
* 8 slices bacon, diced, fried crisp, and drained
* 1 small sweet onion, chopped fine
* 1 cup golden raisins
* 1 cup sunflower seeds
* 1 cup mayonnaise
* 2 TBSP white sugar (start with less if desired)
* 2 TBSP apple cider vinegar

Directions

1. Toss the first 5 ingredients together in a large bowl.
2. In separate bowl, whisk together the mayonnaise, sugar, and vinegar.
3. Add dressing to salad and toss gently to combine. Taste for salt, and adjust seasoning.
4. Cover lightly with plastic wrap and chill for at least several hours. This will get better if chilled overnight.

I love this classic salad, whether as a side dish or a lunch or light dinner. It's classic for a reason - the flavor combination can't be beat.
A note about broccoli: I like to very lightly blanch the cut up broccoli before using. I think it gets rid of any of that bitter taste broccoli can have. I just bring a big pot of water to a strong boil, then drop a strainer basket filled with the broccoli in. Let it heat for about 1 minute, then grab strainer basket out and immediately set in an ice bath. Let cool for a minute, then lift basket out and dump the broccoli out onto a cooling rack covered with paper towels or a flour-sack towel to completely drain and dry. Now the broccoli is sweet while still crunchy. Be sure to totally dry and cool before mixing salad. You can do this ahead of time and refrigerate the broccoli.
You can also substitute Greek yogurt for the mayonnaise and you can totally eliminate the sugar if you wish. But, just a sprinkle of sugar brings out the flavors in both the sweet and the salty parts of the salad.
