Classic Twice Baked Potatoes


* 6 baking potatoes
* 1/4 cup butter
* 1/2 cup sour cream
* 6 slices bacon, cooked and crumbled
* 2 cups shredded sharp cheddar cheese
* 1 teaspoon salt
* 1/8 teaspoon white pepper


1. Preheat oven to 375. Scrub potatoes and poke several holes in the potatoes with a fork. Place potatoes directly on oven rack and bake for 50 minutes. Take out of oven and let sit until you can handle them, about 10-15 minutes.
2. Cut potatoes in half lenghwise and scoop out most of flesh.
3. Put scooped out flesh in a mixing bowl along with the butter and mix until smooth. Add bacon, sour cream, cheese, salt and pepper and mix together for a couple minutes until well blended.
4. Fill potato shells with the mixture and place in a baking dish. Bake another 20-25 minutes, or until potatoes start to get lightly brown.


If you've ever eaten at one of those potato bars, you'll remember how much you liked the classic bacon and cheddar cheese variety. Seems the simpler, the tastier, when it comes to twice baked potatoes. You don't mess with a classic, especially a classic twice baked potato that the whole family loves.
