Classic Twice Baked Potatoes |
Ingredients

* 6 baking potatoes
* 1/4 cup butter
* 1/2 cup sour cream
* 6 slices bacon, cooked and crumbled
* 2 cups shredded sharp cheddar cheese
* 1 teaspoon salt
* 1/8 teaspoon white pepper

Directions

1. Preheat oven to 375. Scrub potatoes and poke several holes in the potatoes with a fork. Place potatoes directly on oven rack and bake for 50 minutes. Take out of oven and let sit until you can handle them, about 10-15 minutes.
2. Cut potatoes in half lenghwise and scoop out most of flesh.
3. Put scooped out flesh in a mixing bowl along with the butter and mix until smooth. Add bacon, sour cream, cheese, salt and pepper and mix together for a couple minutes until well blended.
4. Fill potato shells with the mixture and place in a baking dish. Bake another 20-25 minutes, or until potatoes start to get lightly brown.
