1. In a small saucepan, bring coconut milk JUST to a boil, then add quinoa and return JUST to a boil. Reduce heat to low, cover, and simmer about 15 minutes, until most of the milk has been absorbed.
2. Stir in the brown sugar and cinnamon, cover, and cook an additional 5 minutes, until the remaining milk has been absorbed.
3. Add blueberries, stirring until heated through. Serve immediately as a snack or breakfast.
