Coconut Lime Bananas


* 3 peeled bananas cut into 1 inch pieces
* 1 lime, juiced
* 1 cup vanilla yogurt

* 1/2 cup shredded coconut, toasted


1. Place bananas in serving bowl and sprinkle lime juice.
2. Add yogurt and gently stir.
3. Cover with toasted coconut and serve immediately.


Be sure you toast your coconut for the ultimate warm coconutty flavor and color we love. Just take a large skillet, put it over medium high heat, add coconut (no oil) and toss until you can smell the coconut and it starts to brown. That's when you know it's toasted.

This is a nice treat for a house full of kids. It's relatively inexpensive and the ingredients are very often already in the house. Enjoy!
