Cold soup? Yes! This is an incredible way to enjoy cucumbers in a whole new way. You've got the coolness of the cucumber flavor with the creamy Greek yogurt mixed with the hot spiciness of curry and Tabasco. This cold soup is extremely satisfying on a hot summer day for brunch, lunch, or dinner.
It makes sense to serve little cucumber sandwiches along with this soup, but my favorite is to make BCT - that's bacon, cucumber, and tomato sandwiches. Just thinly slice the cucumbers into strips and lay out on the bread or rolls, then top with big slices of tomato and crispy bacon on top. Use a light mayonnaise or other dressing for extra taste.
