* 1 C. carrots, shredded
* 1 C. cauliflower, sliced in 1/2 in pieces
* 1/2 C. pecans, chopped
* 1 C. spinach, torn into small pieces
* Pepper to taste
Directions
1. Place the carrot, cauliflower and spinach together in a large mixing bow.
2. Toss together well.
3. Fold in the chopped pecans.
4. Cover and place in the refrigerator at least 1 hour.
5. Remove cover and sprinkle in the pepper.
6. Toss well.
7. Serve with your favorite dressing.
