Corny Ham n' Bean Soup |
Ingredients

* 1 tablespoon vegetable oil
* 1 cup sliced green onions
* 3/4 cup chopped cooked ham
* 3 cups fresh corn kernels
* 1/2 teaspoon salt
* 2 cans (15 oz each) navy beans, rinsed & drained
* 2 cans (14 oz each) chicken broth
* 2 cans (4.5 oz each)chopped green chiles (not drained)

Directions

1. Cook onions and ham in hot oil in a large saucepan over medium heat. Cook for about 5 minutes, stirring frequently.
2. Add all other ingredients. Heat to boil then bring heat down and simmer for about 10 minutes.

I don't often find soup recipes that are easy and taste like they've cooked all day. This is a very hearty soup - packed with flavor and "home-cooked" style. This soup has a great traditional appeal. Just serve it with a big chunk of crusty bread and you've got a meal that even a Mother-in-Law will appreciate!
