Country Potato Skillet |
Ingredients
|
* 1 1/2 tablespoons butter
* 1/2 cup chopped onion
* 1/2 cup sliced fresh mushrooms
* 2 1/2 cups thinly sliced potatoes
* 1/4 teaspoon dried rosemary
* 1/8 teaspoon black pepper
* 1 chicken boullion cube
* 1/2 to 1 cup shredded Swiss cheese

Directions

1. Preheat oven to 375.
2. Saute onions and mushrooms in butter in large cast iron skillet, until onions are tender.
3. Add potatoes, rosemary and pepper; stir well.
4. Combine boullion cube with 2/3 cup water then pour over potato mixture.
5. Top with cheese.
6. Cover with tin foil and bake for 1 hour.

This skillet dish is one that I serve for lunch in my family. Really, with the Swiss cheese you've got a complete meal!
Use Yukon Gold potatoes for extra color and flavor. You may also want to fry up some bacon to sprinkle on top for some good smoky flavor. Also, a sprinkle of smoky paprika does the same plus adds great heat and color. I guess you can throw just about anything in this that you want!
