Country Yeast Loaf


* 1 C warm water (110 degrees)
* 21/2 tsp active dry yeast
* 1 1/2 tsp salt
* 11/2 C + 2 tbsp bread flour, divided


1. Sprinkle the yeast into the warm water in a bowl.
2. Let the yeast stand for 5 minutes or until it bubbles.
3. Add in the salt and 1 1/2 C of the flour and mix well.
4. Knead the bread with a rubber spatula by pushing it to the bottom of the bowl.
5. Add the remaining flour and knead for 5 minutes or until spongy.
6. Shape the dough into a ball and place in a bowl that has been greased with butter.
7. Cover and allow the dough to rise for 1 hour.
8. Stir the dough ball around in the bowl to cover with the butter.
9. Recover and allow rising for an additional hour.
10. Form the dough ball into a loaf on a lightly floured surface.
11. Lightly flour a cookie sheet and place the loaf onto the flour surface.
12. Cover and allow the dough to rise double in size for about 1 hour.
13. Set the oven to 375 degrees and when the oven has preheated spray it well with water.
14. Bake the loaf for 5 minutes.
15. Remove the loaf and spray the oven again.
16. Return the loaf to the oven and continue baking 12 minutes or until nicely browned.
17. Cool the loaf slightly in the pan then remove to a wire rack to finish cooling.


There are people who like to listen to music to relax, and then there are people who like to knead dough to get the stress of the day out of their bones. I'm a kneader. preperation to long. Too much time taken up damping oven. I would never bother with this recipe.
