Cranberry Chicken Salad


* 4 cups cubed cooked chicken
* 1 cup mayonnaise
* 1 teaspoon paprika
* 1 1/2 cups dried cranberries
* 1 cup chopped celery
* 2 green onions, chopped
* 1/2 cup diced green bell pepper
* 1 cup chopped pecans
* 1 teaspoon seasoned salt (can substitute table salt)
* romaine lettuce leaves


1. Combine mayonnaise with paprika and seasoned salt in a bowl.
2. Add remaining ingredients and mix together well.
3. Serve by placing spoonful on top of large crispy romaine leaves on a plate.


This is a classic chicken salad that you can find at just about any upscale restaurant. Now you can make it at home for a fraction of the cost. My family thinks the pecans are an extra-special touch that I "invented" just for them! This salad is also perfect for a luncheon with the ladies, or any time you want to impress your guests. Enjoy!
