* 1 cup cranberry sauce (whole berry)
* 1 small sweet orange, zested and squeezed
* 2 Tbsp balsamic vinegar
* 1 tsp Dijon mustard
* 1/2 tsp honey
* 1/8 tsp salt
* 1/4 olive oil
* salad fixings (including spinach and/or lettuce mixes, cooked turkey or chicken, and chopped walnuts or other nuts)

1. Put the cranberries, orange zest, orange juice, vinegar, mustard, honey, and salt in a bowl and stir until blended.
2. Drizzle in the olive oil, slowly, whisking constantly, adding a bit of olive oil at a time until the vinaigrette becomes smooth and thickens.
3. Arrange salad fixings on plates and top with dressing, then sprinkle nuts over the top.

If you have leftover cranberry orange relish, you can use it to make this dressing. You would substitute 1 cup of your leftover relish for the 1 cup of the cranberry sauce. Then simply eliminate the zested and juiced orange in the recipe since it's already in your relish. The rest of the recipe would stay the same. Of course, you can still add more orange if you want to, you just don't need to.
I like this dressing particularly with spinach greens, cooked cubed turkey, and walnuts. The flavors go together very nicely.
