Creamy Carrot Cheese Ball |
Ingredients

*1 (3 oz) pkg. cream cheese, softened
*1/4 C cheddar cheese, grated
*1 carrot, grated
* optional: roll in a little finely chopped peanuts

Directions

1. Place the cream cheese into a mixing bowl.
2. Add the cheddar cheese into the bowl.
3. Sprinkle in the grated carrot.
4. Dampen your hands slightly and roll into a ball.
5. Wrap the ball in plastic wrap.
6. Refrigerate at least 1 hour or until the cheese has firmed.
7. Optional: roll lightly in finely chopped peanuts before serving.
8. Serve with hearty crackers

All cheese balls are not created equal. If you're used to a certain kind of cheese spread formed into a ball and served with crackers, you might want to break away from it and try this unique combination. The grated carrots are very colorful and add a nice sweet, fresh taste to this appetizer. It's good either with or without the chopped peanut coating, but I like the extra salt and crunch.
