Creamy Shrimp Casserole |
Ingredients

* 2 lbs shrimp, cooked, shelled and deveined
* 1 c mayonnaise
* 1 medium green pepper, chopped
* 1 small onion, chopped
* 1 c celery, sliced
* 1 T Worcestershire sauce
* salt and pepper to taste
* 2 c potato chips, crushed

Directions

1. Preheat oven to 375 degrees.
2. Grease a 3 quart casserole dish.
3. Add all ingredients to casserole dish and mix.
4. Sprinkle potato chips over casserole.
5. Bake, uncovered, for 30 minutes.

This is a simple casserole with very basic ingredients that, when combined, compliment each other very well.
Depending on the size of the shrimp you use, you may want to slice them lengthwise in half before mixing in the casserole. If they are "popcorn" size or medium size, you can leave them whole.
Shrimp are easy to cook. I recommend cooking them in their shells for the extra flavor you'll get. Just bring a large pot of water to a boil and put the shrimp in. Just as soon as they turn pink (about 3 to 5 minutes) dump out into a colander and drain well, tossing to remove excess water. You can dump the shrimp out onto a rack to cool faster. Then peel, remove tails, (cut lengthwise in half if necessary) and make sure they are cleaned of any veins. Now, they're ready to add to your casserole.
