Creole Beef Stew


* 1 lb sirloin tip roast, cubed
* 2 tablespoons olive oil
* 2 cups whole kernel corn
* 2 cups cubed potatoes
* 1 cup sliced carrots
* 1 cup trimmed green beans
* 1 cup frozen sweet peas
* 16 oz can tomato sauce
* 4 cups water
* 4 cups beef broth
* 2 tablespoons Creole seasoning


1. Brown beef in large heavy skillet in hot olive oil then transfer to large stock pot.
2. Add remaining ingredients. Stir to mix well.
3. Bring to a boil then bring heat down to simmer and cook for 2 hours, stirring occasionally.


My kitchen has a nice collection of Creole seasonings, all sorts to choose from. If you don't have a Creole seasoning on hand, the blend is pretty simple.

You'll want a mixture of: equal parts, Kosher salt, black pepper, dried onion. Then 1/2 that amount each of parika. Then about 1/3 to 1/2 that amount of garlic powder. Then 1/2 that amount each of cayenne and chili powder. Then 1/2 that amount each of dried thyme and dried oregano. Stir them all together and put in an air tight container for storage.

This mix will give you a pretty standard Creole seasoning, but just tweak it as you like to suit your taste. Enjoy!
