Ingredients

* 3 medium onions, quartered
* 1 lb carrots, cut into 1/2" slices
* 4 parsnips, cut into 1/2" slices
* 4 cloves garlic, minced
* 1 teaspoon dried thyme, crushed
* 1/2 teaspoon pepper
* 2 bay leaves
* 2 tablespoons quick cooking tapioca
* 1 1/2 lbs beef stew meat, cut into 1" cubes
* 1 can (14 1/2 oz) beef broth
* 1 can (12 oz) beer

Directions

1. Put onions, carrots, parsnips, garlic, thyme, pepper and bay leaves in crock pot. Sprinkle tapioca over top.
2. Top with stew meat then pour beer over that.
3. Cover and cook on low 10-12 hours.
4. Remove bay leaves, stir thoroughly but gently and serve.

Beer is one of the secrets to this really great stew. It adds a little tanginess to the background flavors. The alcohol does cook out, so you can serve it to people under 21 years old! Seriously folks, this is worth the time it takes to cook.
If you're like most people, you probably don't happen to have a box of tapioca in your pantry. It's well worth buying a box though because it gives an old-fashioned homemade texture and finish to the stew.
