Ingredients
|
* 3 lbs chicken thighs
* 1 cup celery, diced, about 1/2 inch pieces
* 1 red bell pepper, diced
* 1 green bell pepper, diced
* 1 onion, coarse diced
* 1 can (4 1/2 oz) sliced mushrooms, drained (may substitute fresh sliced mushrooms)
* 1 can (14 1/2 oz) diced tomatoes
* 1 teaspoon garlic powder
* 1 teaspoon sugar (optional)
* 1 teaspoon Cajun seasoning (there are a lot to choose from)
* 1/2 teaspoon paprika
* salt & pepper
* Louisiana hot sauce to taste
* serve with hot cooked rice

Directions

1. Place chicken in crock pot.
2. In bowl, mix together all other ingredients, except rice, then pour over chicken.
2. Cook, covered, on low 7-8 hours.
3. Serve with rice.

My cupboard is full of different creole spices that really need to be used. When I find an easy recipe like this, I try to use up some of my spices so I can buy new ones!
Also, I confess, I love chicken thighs better than the breasts. I know, I know... white meat has less fat than dark meat. But, indulge once in a while. You can find plenty of recipes using chicken breasts, so use chicken thighs as a treat, not a staple.
