Curried Beef Stew - Crock Pot |
Ingredients

* 1 cup small whole onions, peeled
* 1 cup fresh baby carrots
* 12 small new red potatoes, cut in half (about 4 cups)
* 2 lbs boneless beef chuck steak, cut into
1 1/2" chunks (or package of beef stew meat)
* 1 can (14 1/2 oz) can diced tomatoes
* 1/2 cup apple juice
* 4 teaspoons curry powder
* 1/2 teaspoon salt
* 1/4 teaspoon pepper

Directions

1. Place onions, carrots and potatoes in crock pot. Place beef on top of vegetables.
2. In a separate bowl, mix together the rest of the ingredients and pour into crock pot.
3. Cook, covered, on low for 8-10 hours.

I know people who like curry but don't want to make what they consider to be a "typical" curry dish. This is not typical by any means! It doesn't really evoke thoughts of "India" when you serve it... it's more traditional beef stew with a surpise flavor. The apple juice also balances the spicy kick of the curry very nicely.
