* 1 tablespoon vegetable oil
* 8 skinless chicken thighs
* 1 cup chopped onion
* 2 cans (14 1/2 oz) diced tomatoes with green chilies, undrained
* 1 can (14 1/2 oz) crushed tomatoes, undrained
* 2 tablespoons honey
* 1 1/2 teaspoons ground cumin
* 1 teaspoon ground cinnamon
* 1/3 cup creamy peanut butter
* 2 cups hot cooked couscous

1. Brown chicken in oil over medium high heat.
2. Put chicken in crock pot.
3. Stir together onion, tomatoes, honey, cumin and cinnamon in a bowl.
4. Pour over chicken.
5. Cover and cook on low 8-9 hours.
6. Add peanut butter, stir well.
7. Serve over hot couscous.
