1. Put the chicken in the Crockpot and pour the enchilada sauce over it.
2. Turn on your Crockpot and cook on low for 8 - 10 hours until the chicken starts to fall apart.
To use this filling to make enchiladas, add some of the filling in the center of a tortilla. Roll it up and place it seam down in the bottom of a baking dish. Repeat with additional tortillas. Pour another can of enchilada sauce over the tortillas, then top with cheese and bake for 20 to 25 minutes at 375 or until the cheese is melted and golden.
