Crunchy Chicken Salad Lettuce Cups |
Ingredients

* 2 C chicken, cooked and chopped fine or fork shredded
* 1 teaspoon olive oil
* 4 green onions, sliced
* 1 (8 oz) can water chestnuts, drained and chopped fine
* 1/2 tsp red pepper flakes
* 1 TBSP fresh mint leaves, chopped
* 24 smaller romaine lettuce leaves
* 1/2 C roasted peanuts, chopped

Directions

1. In a large bowl mix together the chicken, olive oil, green onion, water chestnuts, red pepper flakes, and mint leaves.
2. On each lettuce leaf place 2 TBSP of the chicken mixture and top with chopped peanuts.
3. Place one or two on small salad plates with bread sticks or crunchy bread alongside to serve.

These little lettuce cup salads are awfully cute! They taste great, too! Kids tend to like this meal because it's clever, served in the lettuce leaf instead of the lettuce forming the salad. It's also a hit with kids because of the peanuts on top. If you have to emphasize the peanuts a little more to get your kids to eat this chicken salad, mix a few in with the chicken. The mint adds interest, too, so you can tell your kids that it's their first "grown up" salad... perfect for a tea party perhaps!
