Crunchy Parmesan Baked Chicken


*3 Tbsp butter or margarine, melted
*1/2 C cornflakes, crushed
*2 Tbsp Parmesan cheese, grated
*1/2 tsp Italian seasoning
*4 boneless, skinless chicken breasts


1. Place the butter in a bowl.
2. In a separate bowl, combine the cornflakes, cheese and seasoning in a bowl.
3. Dip the chicken first into the butter and then roll through the cornflake mixture.
4. Place in a shallow pan and bake in a preheated 375 oven for 30 minutes.


What simple ingredients! Since I always have cornflakes in the pantry and Parmesan cheese in the refrigerator, this just seemed like a natural go-to baked chicken dish. I love the somewhat sweet flavor with the cheese flavor, and the Italian seasoning makes everything come together. This is a very kid-friendly dish. Add a bit more cheese if your kids are finicky eaters and they will definitely be enticed to try it.
