Crunchy Topped Butternut Squash Bake


* 3 tablespoons butter
* 1/2 cup chopped onion
* 1 medium green bell pepper, chopped
* 3 1/2 cups cooked butternut squash, mashed
* 1/2 to 3/4 cup crushed saltines
* salt and pepper to taste


1. Preheat oven to 400.
2. Cook onion and bell pepper in hot butter until softened and onion is translucent.
3. Stir in squash, salt and pepper.
4. Place mixture in a baking dish then top with crackers.
5. Bake for 30 to 40 minutes or until hot and bubbly.


Butternut squash are so pretty and delicious! I normally come home from the farmer's market with more than I need, so I'm always looking for ways to cook them that's a bit different.

This dish is a delicious mix, the onion and green pepper add great flavor. But, the real winner is the crunchy saltine topping, which makes this stand out from the routine mashed-squash-on-the-plate side dish.
