Rachael Ray's 30-Minute Healthy Recipes
*1/2 cucumber, finely diced
*1/2 sweet red pepper, finely diced
*1 scallion, finely chopped
*1 tbsp lemon juice
*1 tbsp olive oil
*1/2 tsp soy sauce
*Bunch of fresh parsley, finely chopped
1. Combine all ingredients in a bowl.
2. Mix gently until well blended.
3. Season with black pepper, cover and chill until ready to use.
Use nice firm cucumbers for this dish so their flavor is intense. Make this salsa fresh to serve with grilled fish.
Because you're using cucumbers, this salsa won't keep in the refrigerator for very long. Cucumbers tend to get "weepy" and the salsa will be watery if this happens.
