Curried Apple Zucchini and Rice Soup |
Ingredients

* 2 tbsp margarine
* 1 large onion, chopped
* 1 apple, peeled, cored and chopped
* 1 tsp curry powder
* 4 C of chicken stock
* 1/4 C uncooked rice
* 2 C diced unpeeled zucchini
* 1/2 tsp salt
* 1 C of milk

Directions

1. Melt the margarine in a large saucepan.
2. Sauté the onion and apple 3 minutes just until they begin to soften.
3. Stir the curry powder into the mixture, mixing well.
4. Add the chicken stock and bring the mixture to a steady rolling boil.
5. Add the uncooked rice, zucchini and salt.
6. Cover and simmer gently 30 minutes or until rice and zucchini become tender.
7. Place the mixture into the blender and blend until very smooth.
8. Return the mixture to the saucepan and stir in the milk.
9. Heat the mixture over low, not allowing it to boil, for 5 or 6 minutes or until heated through.
