Choose any apples you like, but I recommend you use 2 sweet apples and 1 tart apple for a great flavor combination. The dressing is nice and sweet and tart at the same time which makes all the flavors come together.
*Toasting almonds: If you don't know how to toast almonds, it's as simple as putting them into a dry skillet on top of the stove. Turn the heat to medium low and shake the almonds around a little until they start to get fragrant and a touch golden.
