Double Tomato & Sausage Pizza |
Ingredients

* 1 pizza dough
* cooking oil spray
* 2 Tbsp oil from jar of sun-dried tomatoes
* 4 sun-dried tomatoes from jar, cut up small
* 6 slices Provolone cheese
* 2 (4 oz) links breakfast or Italian sausage, cut into small chunks
* 2 cups grape tomatoes, cut in half
* optional: fresh basil chopped fine

Directions

1) Preheat oven to 450 degrees.
2) Prepare pizza crust by rolling out or shaping into desired shape for baking pan or pizza pan.
3) Spray pan with cooking spray and put crust on it, then and set pan with crust in oven on bottom rack, baking for 10 minutes.
4) Meanwhile, in skillet over medium high heat, brown the sausage.
5) Remove crust from oven and brush oil from sun-dried tomato over the crust.
6) Distribute the sun-dried tomatoes evenly over the crust, top with the cheese, then the sausage, and finally the grape tomatoes.
7) Put pizza in oven on bottom rack and bake for 8 to 10 minutes or until the edges of the crust is brown, the cheese melts, and the tomatoes are cooked.
8) Remove from oven and let cool for 5 minutes. Then slice as desired. Sprinkle fresh basil on top if you like.

This is our very basic and very "tomatoey" recipe for pizza. I use any pizza dough that I find at a good price in the store. I don't care if it's a circle or rectangle - it all tastes great!
Go ahead and add any other ingredients you like to this recipe. I recommend that if you do add chopped green peppers, onion, mushrooms, etc, that you cook those with the sausage (just until beginning to get soft) so you don't end up with totally raw veggies when your pizza comes out of the oven.
