Easiest Beefy Vegetable Penne Soup - Crock Pot


* 2 cans (14 oz size) beef broth
* 1 can (14 oz) diced tomatoes
* 1 pkg (16 oz) frozen mixed vegetables for stew
* 2 cups water
* 1/2 tsp garlic salt
* 1/8 tsp black pepper
* 1 1/2 cups penne noodles, uncooked


1. In crockpot combine all ingredients EXCEPT penne noodles.
2. Cover and cook on LOW for 8 to 9 hours.
3. Add penne, cover and cook 30 more minutes or until noodles are tender.
4. Garnish with parsley and Parmesan cheese if desired and serve hot with crusty bread for a filling meal.


No chopping, no browning meat... you don't even cook the penne noodles before you throw them in the crock pot! This is by far the easiest beef vegetable soup you can possibly make.

Of course, if you have a little beef roast leftover from another meal, go ahead and cube up a handful or two to throw in after the penne noodles are done cooking. Just let it heat through for a few minutes, then serve.

Also, use any mix of frozen vegetables you like, but if you want an authentic tasting beef soup, stick close to the traditional vegetable variety specifically for beef soup or stew.
