Easiest Beer Batter for Fish Fry |
Ingredients

* 1 cup(8 oz)ice cold beer (A bottle or can is typically 12 oz... enjoy the leftovers!)
* 1 cup flour
* 1/2 tsp salt
* 1/2 tsp baking powder
* 1/4 tsp black pepper
* 2 eggs
* medium size fish fillets, your choice (anything that fries well)
* peanut oil (or other high heat oil of choice)

Directions

1. Mix all ingredients together in large bowl until blended well, but don't beat.
2. Dip fish fillets individually in batter until well coated.
3. Fry in large heavy skillet, turning once, until golden brown, in just enough oil to come up half-way on fillet. Be sure to drain each piece well on rack covered with paper towels. (Grocery bags work well too.)

In Wisconsin, Friday night fish fries are everywhere. A really good Beer Batter is worth the drive. Here's one we make at home. If you're lucky enough to have a fisherman in the house, all the better. But store bought perch, walleye, whitefish or any solid fillet is just as tasty.
