Easiest Polynesian Fried Rice


* 1 (6 oz) pkg. Oriental fried rice mix
* 1 Tbsp frozen orange juice concentrate, thawed
* 1/4 cup crushed pineapple


1. Cook the rice according the directions on the box.
2. When the rice has completely absorbed the water, add the orange juice and crushed pineapple and stir well.


This dish can be tweaked and added to in more ways than I can cover here. Add some small diced pieces of red bell pepper or other veggies to make this side dish heartier. Stir in or add chopped nuts. Serve this dish alongside grilled chicken or fish with similar flavors. Kids love this recipe, of course - it's sweet and yummy!
