Forget all that stuff about how hard it is to make mayonnaise. This recipe is quick and simple and you don't have to be careful not to process it too much or too little. Also, if you aren't sure about eating raw eggs, this recipe uses cooked eggs. You've got nothing to lose when you make this recipe.
If you like your mayonnaise thicker, try Greek yogurt for this recipe. Or, you can drain regular yogurt. Line a colander or sieve with cheesecloth or paper towels, place it in a bowl, then dump the yogurt out into the colander. Cover with more cheesecloth or paper towels and set in the refrigerator overnight. In the morning, lift out with paper towels and you'll find a lot of the liquid has drained off and you have a much more solid yogurt.
