Easy Chicken and Corn Chowder - Crock Pot |
Ingredients

* 1 Tbsp butter
* 1 Tbsp vegetable oil
* 1 1/2 lbs boneless, skinless chicken breasts, cut into 1/2 inch pieces
* 1/2 cup chopped onion
* 1/3 cup chopped celery
* 2 medium carrots, sliced
* 2 cups frozen corn kernels
* 1 can cream of potato soup
* 1 can cream of chicken soup
* 1 1/2 cups chicken broth
* 1/2 cup cream

Directions

1. Put butter and oil in skillet and heat over medium-high heat.
2. Quickly brown chicken pieces in hot skillet, being careful not to overcrowd the pan.
3. Dump the cooked chicken into crock pot.
4. Stir in the remaining ingredients into the crock pot (except the cream.)
5. Cover crock pot and cook on LOW for 4 to 5 hours.
6. Turn off and stir in cream. Cover and let sit for 5 minutes. Stir again and serve.

The reason I brown the chicken (rather than just putting it in the crock pot raw) is because I like the color and added flavor browning gives it. You'll notice the difference.
If you really want to add more flavor, saute the vegetables in the pan after the chicken is browned and removed. Put the sauted veggies in the crock pot, then stir the soups and broth into the skillet to remove the browned bits before dumping in the crock pot. Any time you can cook and loosen up the browned bits from a skillet before adding ingredients to the crock pot, you'll be rewarded with much more flavor.
