Easy Meatball & Navy Bean Soup |
Ingredients

* 24 frozen meatballs
* 2 cans navy beans, not drained
* 1 can diced tomatoes, not drained
* 1 can beef broth
* 1 large onion, chopped
* 2 cloves garlic, minced
* 2 carrots, sliced
* 2 zucchini, sliced
* 1 teaspoon salt
* 1/2 teaspoon pepper

Directions

1. Put the meatballs, beans, tomatoes, broth, onion and garlic in a large soup pot and cook over medium heat for 20 minutes.
2. Add the remaining ingredients and cook another 20 minutes, stirring occasionally, until vegetables are tender but not mushy.

I found a wonderful thing in my grocery store... frozen meatballs! I like making my own meatballs, but really, there are many times when I just don't want to take the time. These frozen meatballs are a good way to be able to create meatball soups and other dishes without the time it usually involves. This is one little shortcut that really pays off.
